Easy Quicky Hearty Chicken Noodle Soup

It's 5:00pm and you're stuck in rush hour traffic. You're almost certain you won't make it on time to pick up your children from day care. By the time you all get home, you are too exhausted to even think of dinner much less make it. This scenario has happened to me more than once, and I'm sure a lot of working moms out there can relate to this as well. To avoid the temptation of simply sticking pizza in the oven and disrupt the well-balanced diet I'm trying so hard to instill into my children's lifestyle, I've created a quick and foolproof semi-homemade recipe for a Hearty Chicken Noodle and Vegetable Soup.


I have tried several versions of homemade Chicken Noodle Soup before and this one seems to be the easiest to make and healthiest version without sacrificing any of the flavors. Hope your family enjoys it as much as mine does!

HEALTHY HEARTY CHICKEN NOODLE AND VEGETABLE SOUP

2 pcs chicken breast cutlets (trimmed)
1 cup diced carrots
1/2 cup diced celery
1/2 of an onion, diced
1 can cut green beans
2 1/2 cups water
2 tsp Wyler's sodium-free chicken bouillon powder
1 can Campbell's heart healthy cream of chicken soup
salt, pepper, and garlic powder to taste

1) Put the water and Wyler's chicken bouillon in a medium sized pot.

2) Add the uncooked chicken, carrots, celery, green beans, and onions. Cover for 10 minutes on medium heat or until chicken is cooked.

3) Remove the chicken from the pot and separate the meat. NOTE: You can cut the chicken into small cubes beforehand if you want to skip this step. (My kids prefer the shredded chicken to the cubed ones for some reason)

4) Add the entire can of Campbell's cream of chicken soup. Simmer for 15 minutes.

5) Add salt, pepper, and garlic powder according to your and your family's taste. Mix well and cover for another 5 mins. Then, serve and enjoy.


Serves 4 people.

This recipe only has 100 calories per bowl and it tastes just the way grandma used to make it (it's actually better, just don't tell grandma that). Also, if you don't have Chicken Bouillon at home, feel free to substitute that and the water for 2 1/2 cups of Chicken Stock or Broth.
