The Healthier Chocolate Cake

So I've decided to give blogging a shot. This first post goes out to all the the moms with picky kids and or husbands and are looking for great ideas to incorporate vegetables into their family's diet. A scrumptious, super moist, and best of all, guilt-free chocolate cake made with zucchinis.

I CAN'T BELIEVE IT'S NOT FATTY CHOCOLATE CAKE

1/4 cup semi-sweet choco chips
3/4 cup dark choco chips
2 eggs
1 egg white
1/2 cup honey 
3/4 cup unpacked light brown sugar
1/2 cup canola oil
1/2 cup original apple sauce 
1 cup all-purpose flour
1 cup wheat flour
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1/2 tsp cinnamon powder
1.5 cups grated peeled zucchini
1/4 cup semi-sweet choco chips (optional)
1/4 cup walnuts (optional) 

1) Preheat the oven to 350F. Grease a 9x5 loaf pan.

2) In a microwave safe bowl mix the chocolate, cover with a paper towel, and melt on high for 45 sec. Stir the partly melted chocolate until it's all smooth melted together.

3) In a large bowl mix the eggs, egg white, honey, brown sugar, apple sauce, oil, zuchinni, chocolate, beat well.

4) Add the all-purpose flour, mix until fully incorporated. Then add the wheat flour, mix until fully incorporated. Add the baking soda, salt, cinnamon.

5) Fold in the rest of the semi-sweet choco chips and the walnuts. NOTE: This step is optional. If you want a healthier version, you can substitute the semi-sweet choco chips for dark choco chips and omit the walnuts, or you can omit this step altogether.

6) Bake at 350F for 50 minutes or less depending on your oven. To know when to take it out, stick a toothpick in the center of the cake and make sure it comes out clean. Cool the cake completely before serving or it will just fall apart.
